This time of year, I am always looking for ways to stay warm and cozy. That means fuzzy socks, some mulled wine, and a good spiced cake. The more spice, the better.
I tried ‘Tessa’s spice cake’ recipe in the ‘Sweet’ cookbook that was adapted from Tessa Faulkner’s original recipe. This spice cake packed a good punch - I would honestly add some ground ginger to make it even more spicy - but, to each their own. The recipe did not lie, no icing was needed. The cake was plenty tasty on its own. Although, the next time I make this, I’ll consider adding some sort of maple or rum icing for another layer of flavor.
Final notes?
I did not need to bake the cake for the full 70 minutes indicated in the recipe. I ended up baking it for a little less then an hour and the cake was fully baked. I am definitely adding this to my fall and winter bake list to revisit. It was a crowd pleaser… the crowd being me.
